Ingredients
- 500g cheese – finely grated
- 50g mixed fresh herbs – finely chopped
- 75g plain flour
- 6 eggs
- 500ml whole milk
- Pinch of cayenne pepper
- Salt and black pepper
- Rapeseed oil for frying
Method
- Sift the flour and cayenne pepper together.
- Add the eggs and milk and whisk into a smooth batter.
- Stir in the cheese and herbs, cover and leave to stand in a cool place for an hour or two.
- Heat some oil in a thick bottomed frying pan and when hot, drop one tablespoon of the batter at a time into the oil. Gently flatten each fritter to make a small flat cake.
- Cook for 40-60 seconds per side.
