Ingredients

  • 500g cheese – finely grated
  • 50g mixed fresh herbs – finely chopped
  • 75g plain flour
  • 6 eggs
  • 500ml whole milk
  • Pinch of cayenne pepper
  • Salt and black pepper
  • Rapeseed oil for frying

Method

  • Sift the flour and cayenne pepper together.
  • Add the eggs and milk and whisk into a smooth batter.
  • Stir in the cheese and herbs, cover and leave to stand in a cool place for an hour or two.
  • Heat some oil in a thick bottomed frying pan and when hot, drop one tablespoon of the batter at a time into the oil. Gently flatten each fritter to make a small flat cake.
  • Cook for 40-60 seconds per side.
