Ingredients

  • 2 baking potatoes  baked
  • 300g fish pie mix
  • 300g whole milk
  • 2 bay leaves
  • 2 tbsp fresh parsley – chopped
  • 50g unsalted butter
  • 50g Cheddar cheese – grated
  • 30g peeled prawns
  • Salt and black pepper

Method

  • Pre-heat the oven to 220°c/425°f/gas mark 7.
  • Poach the fish in the milk with the bay leaves, some parsley stalks and a sprinkle of black pepper. Once cooked, set aside a leave the fish to cool in the milk.
  • While still warm (not hot), cut the baked potatoes in half and carefully scoop the flesh out into a bowl. Mash with the butter, cheese and a little of the fishy milk. Adjust the seasoning.
  • Flake the fish and discard any skin, bones, parsley stalks and bay.
  • Add the fish, prawns and chopped parsley to the mash and gently mix together.
  • Pile the fish mash back into the potato skins and bake for 20 minutes or until golden on the top.
