Ingredients
- 2 baking potatoes – baked
- 300g fish pie mix
- 300g whole milk
- 2 bay leaves
- 2 tbsp fresh parsley – chopped
- 50g unsalted butter
- 50g Cheddar cheese – grated
- 30g peeled prawns
- Salt and black pepper
Method
- Pre-heat the oven to 220°c/425°f/gas mark 7.
- Poach the fish in the milk with the bay leaves, some parsley stalks and a sprinkle of black pepper. Once cooked, set aside a leave the fish to cool in the milk.
- While still warm (not hot), cut the baked potatoes in half and carefully scoop the flesh out into a bowl. Mash with the butter, cheese and a little of the fishy milk. Adjust the seasoning.
- Flake the fish and discard any skin, bones, parsley stalks and bay.
- Add the fish, prawns and chopped parsley to the mash and gently mix together.
- Pile the fish mash back into the potato skins and bake for 20 minutes or until golden on the top.
